Expecting a freeze tonight, we cut down the last of the tomato vines, a Black Krim variety, and decided to have fried green tomatoes for lunch. We used Mrs. P's recipe, below. I don't recall eating these before, and my, were they delicious! I only ate one of my portions, so that means lunch for tomorrow :)
Fried Green Tomatoes
Cut tomatoes not too thick, not too thin
Dip in mixture of salt, pepper, garlic powder, flour
Pan fry in oil.
We used light olive oil (not extra virgin) in our cast iron skillet and turned each slice once. We served ours on bread with a sprinkle of Parmesan cheese. They were very flavorful. The frying makes the outside crunchy and the inside soft and tender. Mmmmmm.
